This is yet another recipe from my upcoming raw food cookbook. It is perfect for Sehoor or as an Iftar dessert.


Ashure or Noah’s pudding is often referred to as the oldest dessert in the world. The story goes that when the waters of the great Flood receded, and the Ark reached land at the Mount Ararat, Prophet Noah and his family gave thanks for this Divine miracle by cooking together the tidbits of the dwindled food supplies. The outcome was a wholesome pudding of whole grains, beans, dried fruit, nuts, and spices, that has survived to this day, under various names, as a celebratory dessert in different cultures and religions of the Levant and beyond. ’Ash’ means congee in Turkish and Ashura means tenth in Arabic, and Ashure is usually made on the tenth day of the first month of the Islamic Lunar Calendar or Muharram, to commemorate the Ark’s landing. It is made in great quantities and distributed to as many people in one’s circle and community as possible, regardless of religion or belief system, as an offering of peace and love. This raw version of Ashure will take a couple of minutes to prepare, but the pure nutritional power it delivers, is nothing short of miraculous.



Serves 2

1 C. filtered water*

2 T. chia seeds

2 T. buckwheat groats**

1 tsp. cinnamon powder

1 tsp pumpkin seeds

1 tsp sunflower seeds

1/2 tsp sesame seeds

1 apple, diced

1 T. goji berries

2 T. raisins

4 figs, fresh or dried, diced

2 dried apricots, diced

1/2 C. orange juice

2 T. lemon juice

1 T. rose water

1 T. orange blossom water

¼ vanilla bean, scraped


GARNISH (any or all of the following)

Walnuts/ almonds/pistachios, chopped

Pomegranate seeds or fresh berries

Rose petals

Coconut flakes

Lemon balm leaves

Combine all the ingredients in a bowl. Stir well. Let sit for at least 30 minutes in the refrigerator for the flavors to marry. Stir occasionally.. Divide between 2 serving bowls. Sprinkle with chopped nuts, pomegranate seeds and any of the listed garnish alternatives.




Chia seeds are a true food for champions! Rich in fiber, quality plant protein, Omega-3s, antioxidants, and bone health promoting micro-nutrients. They can absorb 10-12 times their weight in water, becoming gel-like in the stomach. This prolongs hydration, improves nutrient absorption, regulates appetite, and supports health and function of the gut.


* Alternatively fresh coconut water.

** Preferably sprouted.
