Pasta. Everybody’s favorite. Lethal if eaten after fasting.
Here is a raw version that tastes like the real deal, minus the collateral damage.
I call it ‘3 Raw P’s: Pasta, Pesto, Parmesan’.
Thank God for these big rawsome favors and blessings that come in three.
Raw Iftar Pasta
Ingredients (opt for organic if possible):
3 green or yellow squash or zucchini
10 cherry tomatoes cut in half or 3-4 regular ones (chopped)
5 medium size mushrooms (sliced)
2 spring onions (chopped)
1 handful fresh parsley (finely chopped)
1-2 tablespoons cold pressed olive oil
Pinch of black pepper
For The Pasta
There are several ways make pasta from a squash. You can use an ordinary (potato) peeler: Peel thin slices of the squash to create thin strands of pasta or ‘tagliatelle’ in this case.
Another way is using a kitchen tool often used in the raw food kitchen and by chefs: a spiralizer. Cut the zucchini in about four pieces and by putting them in the mandolin, you can create beautiful thin angel hair spaghetti.
Put the tagliatelle in a bowl together with all other ingredients, sprinkle with olive oil and season with black pepper. Set aside.
1 handful fresh mint leaves
1 handful fresh basil leaves
1/4 cup any natural nuts you’ve got (pine nuts, walnuts, cashews, almonds, Brazil nuts, pistachios etc. You can throw in some seeds as well – pumpkin seeds, de-shelled hemp seeds, sunflower seeds etc. Experiment until you find your perfect combo.)
1/3 cup olive oil
2 peeled cloves of garlic
1 teaspoon fresh lemon juice
1/2 tsp sea salt
Toss all ingredients in your food-processor and blend until chunky. Transfer into a glass jar with a lid and keep refrigerated. Bring back to room temperature before serving.
You can use Rawsome Pesto as a base for any salad dressing or a dip, or simply in any dish that needs an instantaneous taste-lift!
1/2 cup of Brazil nuts
Grind the nuts in the coffee grinder. E Voila!
Mix in 2-3 tablespoons of Rawsome Pesto into your tagliatelle&veg mix, and sprinkle some Raw Parmesan over this beautiful rawlicious homage to Italian cuisine, share it with your Iftar guests, and enjoy with gusto and gratitude!
